KOALA'S MARCH Surprise box: caramel mousse with Koala biscuits in chocolate cookie box

 Let's create surprise menu together:  KOALA'S MARCH Surprise box, caramel mousse with Koala biscuits in chocolate cookie box


Even it's a surprise box, it's not hard to make, and you can prepare it ahead of time too. Just bake the cookies and turn it into a box, then make the mousse before serving. Or make only the cookie box is a great (and cute) idea

So, today let making it before creating your own menu!

KOALA'S MARCH Surprise box
Makes 2 boxes

Cookie box
75g ............................. Unsalted butter
50g ............................. Granulated sugar
1tsp ............................. Vanilla extract
1 ................................. Egg yolk
125g ........................... All purpose flour
13g ............................. Cocoa powder
1/8tsp ......................... Instant coffee granules
.................................... Pinch of salt

Caramel mousse
1tsp ............................. Water
50g .............................. Granulated sugar
50g .............................. Whipping cream (A)
40g .............................. Salted butter
1 .................................. Egg yolk
150g ............................ Whipping cream (B)

30g .............................. Dark chocolate
2-3 boxes .................... KOALA'S MARCH




 Beat the butter until soft, add the sugar and beat until light in color.
Add egg yolk and beat until combine.

 Sift the flour, salt, cocoa powder and instant coffee granules into the bowl.
Mix to combine.
 Knead until smooth.

 Roll between 2 sheets of baking paper to 4 mm thickness.
Refrigerate at least 30 minutes before using.

Cut into 2 (23x7 cm rectangle)
And wrap around 2 (7 cm) cake rings.

 Cut the rest into 4 circles (8cm).
Refrigerate at least 30 minutes before baking.

 Bake the boxes in 180C preheated oven for 20 minutes.

  Bake the rest of the cookie in 180C preheated oven for 17-20 minutes.

Let the cookies cool before using.

 Melt 30g of the chocolate in the microwave.

 Brush 1 circle cookie and inside of the cookie box  with dark chocolate.

 Stick them together, do the same again, you will get 2 boxes of cookie box.
Refrigerate at least 30 minutes before using.

 Put 1 tsp of water and sugar into a saucepan.
Heat until caramelised.
Heat the whipping cream (A) until hot, pour into the saucepan, and stir until combine.

 Remove from the heat and put the butter into the saucepan, stir to combine.

 Put the egg yolk into the saucepan, and stir to combine.

 Pass through a sieve into a bowl and let it cool before using.

 Whip the whipping cream (B) until soft peaks formed.
Fold 1/3 of the whipped cream into the caramel.

 Then pour the mixture back into the whipped cream bowl.

 Fold to combine.

 Pipe into the prepared boxes, tap to smooth the top, refrigerate at least 30 minutes.

 Cute Koala biscuits.

 Put the biscuits into the box.

Place another circle of cookie on top and you get a  Surprise box.
